Recipe: Vegan Basil Pesto

I recently visited my grandma for a few days. I especially like visiting her village at the summer for two reasons : figs + basil. Both fresh, in high quality, bio and in big quantities! This time, I had so little time cause Nereus runs more and sleeps less (oh and I was working too) and I couldn't experiment as much as I like with food, but I couldn't resist and I made some pesto!


For this pesto I used a mortar and pestle (which has a story actually...my great grandfather worked a whole day to get this beauty!). My pesto was a little chunky. If you want it perfect ( I'm talking about its appearence, the taste was divine), you can use a blender. I didn't work it more with the mortar and the pestle cause my carpal tunnel was killing me, so I don't know what result I could get.

So, on the recipe!!!

Ingredients:
  • 1 cup fresh basil leaves
  • half a cup pine nuts
  • half a cup nutritional yeast
  • half a cup olive oil
  • 3 cloves of garlic

Now, simply put everything in your mortar or blender and work the mixture.
Your done!
