I am kind of obsessed with this sauce lately. I use it everywhere from veggie patties to cooked vegetables to wraps...I even add it in my veggie souvlaki!
The first time I tasted this sauce was in a (non vegan) souvlaki that Philip brought me from a restaurant he was working at. It was sooo yummy! It had many vegetables in it and that gorgeous sauce! I was in love!
Now, that I'm vegan I just had to veganize this amazing food. I'm still working on the souvlaki but ayoli sauce is already perfected and I'm sharing my super simple recipe with you today.
- 1 cup vegan mayonnaise (I have tried a couple of store bought and they were fine but too expensive for me and hey! i love making everything on my own so I use my homemade mayo, but you could use any mayonnaise you like best. I will post my mayonnaise recipe sometime in this month.)
- 5-6 crushed garlic cloves (I love garlic a lot and tend to use lots of it. You can start with four and add more if you like.)
- 2 tablespoons fresh lemon juice
- black pepper
Mix all the ingredients in a bowl aaand you're ready haha! Seriously it's that simple!
If you want a variation, add a little bit of mustard and/or ketchup.
I keep mine in the fridge for about a week.
